The documentary Supersize Me, where a person has eaten McDonald’s for the whole month, has been challenged by a Fathead documentary in 2009 addressing lipid hypothesis.

As soon as the documentary came out, all the keto followers got associated and came up with a perfect dough with minimal carbs to use for various recipes. This dough has been called Fathead after the movie.

As this dough is used for various recipes, and each has a different portion, I will try and give you a ball figure for the recipe I am making.

With our recipe and amounts of ingredients, you can make 2 medium size pizzas or 8 pretzels or one tiny bit thicker base for your pies or quiche.

Splitting this recipe into 8 portions, you get 1 gram of carbs and 1 gram of fiber. Other nutritions are 145 grams of calories, 12 grams of fat, and 8 grams of protein.

If we split this recipe into 6 portions, carbohydrates are 2 grams with 1 gram of fiber. Additionally, 194 grams of calories, 16 grams of fat, and 11 grams of Protein.

Once the dough has come together knead it for about 5 minutes and then place the dough between two pieces of parchment paper and roll it out until it’s about ¼ inch thick. This will give you a nice thin crust that will be golden brown and crispy when cooked. You can even make fathead pizza dough ahead of time and save for later.

Place on a pizza stone for extra flavor you can add some Italian herbs or Parmesan cheese to the dough before rolling it out. Once your crust is ready top it with your favorite low carb toppings and bake in the oven until heated through and golden brown. Enjoy.

To make fathead dough is very easy. You can choose different ways to make fat head dough to suit your needs and preferences.

  1. Microwave – Microwaving has been the most popular way to make your fathead dough. It is easy and super quick.
  2. Non-stick cooking pot – has been my favorite of all as with cooking the dough this way, I get it right every single time. This is the method we are using in our recipe.
  3. Double boiler – Using a double boiler is another choice for preparing fathead dough for various recipes. The only backslash, it is a bit more time-consuming as it takes a while until mozzarella cheese melts thoroughly.
  4. Blender – Even though I have not tried this version, some people swear by this method as, apparently, it is the easiest. I still need to give it a try.
  5. Food processor – Similar to using a blender, your mozzarella cheese and all other ingredients get thoroughly mixed into a super delicious fathead dough.

What cheese to use for easy low carb fathead dough?

The best cheese to make fathead keto dough is mozzarella for its mild flavor.

Although I have heard of people using other hard cheeses like gouda or cheddar, I have not personally tried it.

The type of mozzarella does not matter, as long as you shred it at home.

Store-bought pre-shredded mozzarella or any other cheese contains starches to separate the cheese shreds and prevent them from sticking. This will add lots of carbs into your dish, which is precisely what we do not want.

I always buy a big block of mozzarella (not in the water) and shred it myself. That way, I know it only contains the cheese and nothing else, and I suggest you do the same.

What flour to use for fathead dough making?

Almond flour

Our recipe is made with almond flour to try and resemble traditional dough the most.

Our basic dough recipe calls for blanched almond flour for its extra mild taste and beautiful bright color.

But you can use various low-carb flours you have at home.

Coconut flour

Is the second most popular keto flour in fathead recipes. Here the measurements are a bit different as when you use coconut flour compared to almond flour, only a ¼ of the amount is needed because of its dryness. I have used it in our Italian breadsticks, and if you are afraid of the taste of coconuts, don’t be. No taste at all.

Some recipes are made with a combination of almond and coconut flour.

Oat fiber

One experience I have had was replacing fiber instead of flour in making the flat bread. And I tell you. Making our Tortillas using potato fiber or tortilla recipe with 0 carbs using oat fiber has been the best keto dough to work with.

The dough was a bit darker than the almond flour but so soft, that I could not believe it. Because of the pliability I have seen, I promised to try and make a few more recipes using oat fiber as a fathead dough base.

Other low-carb flours

Other keto flours that could be used are sesame flour or sunflower flour.

Although our basic recipe contains only 3 ingredients, some of them might still be out of the question for you.

Egg-free fathead dough

For those allergic to eggs, you can make a perfect dough that is made without eggs as I have made it in our egg-free breadsticks.

Nut-free

If you want a nut-free option, simply replace the almond flour with coconut flour. Here you have to reduce the amount of coconut flour to ¼ of a cup because of its dryness.

Seasoning

Depending on the end dish you will be making, you can add various herbs, Italian seasoning, dry garlic, or a sweetener of your choice for sweet fathead desserts.

Cream cheese

Having both mozzarella cheese and cream cheese together will result in your dough is a bit creamier.

Baking powder

Using a baking powder is possible if you are looking to prepare a dish that needs a bit of uplift or puffiness.

Start with heating your non-stick pot on a medium-high. Place your shredded mozzarella and start melting it until you get the consistency on the image.

Once the cheese melts, turn the heat off and add the almond flour. Using a wooden spoon bled it all together halfway. Add one egg and work the dough.

Using a spatula, start mixing dough together thoroughly until all blended. No worries if you see streaks of cheese or almond flour. Those all could be worked out later on.

Fourth step: Work the dough

Once you feel that the dough is thoroughly mixed, wait until you can handle the heat of the dough with your bare hands.

Place the dough on a parchment paper or silicone sheet, and using your hands as you see in the video, start working your dough.

This process might take 5 to 10 minutes until all is combined into one smooth consistency dough.

If you feel there is no way of getting it smooth anymore, you can place it back on the heat a bit or into the microwave to melt the cheese and continue the process again.
