Why We Love This Recipe

We’re slightly obsessed with ginger. Like, we buy Costco boxes of fresh ginger monthly. It just adds SO much flavor and I swear it makes me feel healthier.

So obviously I needed to add ginger to our daily matcha lattes (that we already add honey to) and this honey ginger syrup was born. So let me share with you more about why we love it!

  • Saves money making our own simple syrup rather than buying it or going out for fancy lattes regularly.
  • Can be used in so many ways, from drinks to being a soak for a cake like this gluten-free lemon cake.
  • It uses all-natural sugar rather than white sugar like traditional simple syrup. Plus, honey and ginger both boast loads ofhealth benefits.
  • 3 ingredients are all you need to make it! Just like our other 3 ingredient recipes like our 3 ingredient peppermint tea, 3 ingredient greek yogurt pancakes, and 3 ingredient banana mug cake.

Substitutions & Variations

All substitutions are a 1:1 substitute unless otherwise noted. See recipe card for quantities.

  • Honey substitution: You can use white sugar or agave in place of the honey but then it’s obviously not honey ginger in flavor. I don’t recommend maple syrup because of how distinct of a flavor it is. If you have any, I highly recommend sticking with it (from raw honey to wildflower honey, any will work).
  • Ginger substitution: If you want to use ground ginger, use ½ a teaspoon in place of the freshly grated ginger.
  • Lemon ginger honey syrup:Try adding the zest from half of a lemon and a squeeze of lemon juice.
  • Turmeric lemon syrup:Turn this into your own medicine ball syrup by adding equal parts turmeric and ginger.

Throughout our testing of thisginger syrup with honey, we learned what worked and didn't work. Here are the key takeaways!

  • Honey bubbles: When honey is heated, it starts to really bubble so you need to watch it carefully to make sure it doesn’t boil over.
  • Storage: This syrup becomes very sticky and stiff when stored in the fridge so we recommend storing it at room temperature. If it does get stiff, just pop it in the microwave for 30 seconds to soften.

Step one:heat everything on the stove and bring to a simmer

Step two:keep simmering until everything is combined and the mixture has slightly reduced into a pourable syrup

Step three:remove from heat, strain if desired, and use as desired

helpful tips

  • Strain the mixture if desired but if you use a microplane to grate the ginger, I don’t find it necessary. If you plan to strain, you can just use ginger pieces and simmer twice as long to infuse the flavor.
  • Peel the gingerusing the back of a spoon or simply grating the outside to remove the skin. You can also just use ginger that’s already minced or grated (available in the produce section).
  • If you want a stronger ginger flavor, feel free to double the ginger quantity. I wouldn't do more than that though as it will become bitter.
  • Double or triple the recipe to make enough for a party or for your whole family.

The best way to strain it is through a fine mesh sieve or co*cktail strainer.

Is this good for coughs?

According to the Mayo Clinic, there is someevidencethat both honey and ginger may reduce coughing. I like to think it helps and at a minimum, it can’t hurt!

How should I store this?

The best way to store it is at room temperature in an airtight container for up to 2 weeks. Just be sure to let it cool completely before storing. If it's stored in the fridge, it will get hard and you'll need to microwave it for 30 seconds to soften it.

What are the best uses for this simple syrup?

I love it with this ginger matcha latte, a hot toddy co*cktail, and a Moscow mule. And because honey and whiskey pair so well, it would also be good in an old-fashioned or other whiskey drinks!

Ingredients

  • ¼ cup honey
  • 2 tablespoon water
  • 1 teaspoon grated ginger (or ½ teaspoon ground ginger)
