Ingredients

Ham: You can buy diced ham in most supermarkets. I like to use leftover ham from a holiday roast dinner, but canned and frozen ham can usually be bought all year round. You can also use ham hocks, and a ham bone if you have it available.

Potatoes: Any potatoes will work well in this recipe. I like to use Maris Piper, new potatoes, Yukon Gold potatoes, or Russet potatoes. Red potatoes are also a great choice.

Onions: These add a little extra flavor, but are completely optional. I prefer to use brown or white onions.

Garlic: Optional, but added for flavor. Use fresh garlic cloves or garlic paste.

Green beans: Fresh green beans or frozen green beans are best in this dish. Avoid using canned green beans, as they will become mushy when boiled. Make sure to clean them thoroughly before use.

Chicken broth: This flavorful liquid is the perfect base for the liquid in this dish. Alternatively, you can use vegetable stock or water with a bouillon cube.

One: Warm up some olive oil or canola oil in a large pot over medium heat. Add diced onion, and saute until the onion is soft and translucent. Add the garlic, and saute for another minute.

Two: Add diced ham, green beans, peeled and diced potatoes, and chicken stock to the pot. Bring the liquid to a boil, and reduce it to a simmer. Allow to simmer for 15-25 minutes, or until the potatoes are soft enough to easily pierce with a fork. Serve immediately.
