    Mix dry ingredients

    Preheat oven to 400 degrees. In a medium bowl, whisk together the dry ingredients - almond flour, coconut flour, psyllium, baking powder, salt, and baking soda.

    Grate your butter

    Using a cheese grater, grate frozen butter into the bowl of dry ingredients. Stir to distribute, but don't mix too much. You want the butter to be in lumps. The more the butter is still intack and not soft or melted, the flakier the biscuit will be.

    Mix

    Add in the whipping cream and sour cream. Stir with a spoon to combine until just incorporated.

    Make a rectangle

    On a piece of parchment paper, gently mold the dough into a rectangle that is 1 inch tall.

    Press and fold and press and fold

    Fold one half of the dough onto itself, hamburger style, and press into a rectangle shape that is 1 inch tall again. Continue to fold and mold into a rectangle shape four more times.

    Butter and bake

    Using a knife, cut the biscuits into six squares, brush each biscuit with melted butter, and place on a parchment lined baking tray or baking sheet. Bake at 400 degrees for 10 minutes.

    Let cool

    Remove from oven, and let sit on the baking tray for about 5 minutes. Using a spatula, gently transfer each biscuit to a wire rack to finish cooling. They biscuits will be very tender and deliciate when they first come out of the oven, but will firm up once they cool. For a firmer biscuit, let sit overnight.

    To the flaky, fluffy biscuits, the secret is to use butter that is as cold as you can get it. I like to freeze mine for 30 minutes before using it. Ideally, you want to keep the butter in cold small chunks when making your biscuit dough.

    You don’t want the butter to get soft or melt or else your low carb biscuits may not be so big and flaky.

    My favorite method for incorporating the butter into the dry ingredients it to use a cheese grater to shred the butter. This creates the perfect size for biscuits and it’s easier than cubing the butter and cutting it into the dough.

    If you don’t have a cheese grater, you could cut the butter into small cubes and cut it into the dough using a fork or a pastry cutter; however, the more you manipulate the butter, the faster it will soften. This is why a cheese grater works best.

    Psyllium husk powder

    The psyllium husk in this recipe serves two purposes.

    1. It is used to retain moisture and helps the biscuits from becoming too crumbling as they cool.
    2. It also creates bulk in dough when using it for keto baking.

    My favorite psyllium husk is by NOW Supplements. Make sure you are using the whole psyllium husk and not the powder in this recipe.

    If you are sensitive or allergic to eggs, this low carb biscuit recipe is for you!

    Many keto recipes rely on eggs to help dough or batter rise during baking. This often results in the baked good having an eggy taste since so many eggs have to be used in order to get similar results as breads containing gluten.

    This biscuit recipe uses baking powder, baking soda, and the acid from sour cream to help it rise. Sour cream is acidic and will activate the baking powder and baking soda while they are baking to release carbon dioxide bubbles which help fluff up the bread.

    How can I make keto cheddar biscuits?

    If you are looking for more of a cheddar bay biscuit I would add some shredded cheddar cheese and some garlic powder. I have not tried to make these yet, so please experiment. I will work on a keto cheese biscuit recipe soon.

    Are these biscuits gluten free?

    Yes, there is zero gluten in this recipe as prepared and is grain free. This is an almond flour biscuit and does not use what flour. Almond flour is a regular replacement ingredient in keto recipes because it is low in carb and does not contain gluten.
